Ingredients

Units Scale
  • 4 chicken breasts, boneless and skinless
  • 23 cloves of garlic, minced
  • 45 ounces of tomato paste
  • 2 liters of water
  • 2 tablespoons of olive oil, plus extra
  • 5 whole cloves
  • 5 whole allspice
  • 1 cinnamon stick, 3 inches, rinsed
  • salt and pepper, to taste (3 tablespoons salt, 1.5 tablespoons pepper)

Instructions

  1. Sauté
    Add 2 tablespoons of oil to medium heat pot. Sauté onions and garlic for 3-5 mins.
  2. Add tomato paste, cooking for another 5 mins.
  3. Add chicken
    Add chicken breasts and water, gently stirring to loosen onions and garlic from bottom of pan.
  4. Add spices
    Add spices and remaining olive oil
  5. Simmer
    Simmer forever (or until sauce is cooked down by half).
  6. Serve
    Serve over pasta, sprinkle with feta.
  7. Optional: add 1-2 palm-sized potatoes for a late night snack
