Mushy peas are simple, savoury, and perfect with fish and chips or bangers and mash

Ingredients

  • 2 cups of peas, frozen (marrow peas if available)
  • 2 tablespoons of butter
  • 1 onion, small and finely chopped (or shallot)
  • 1/2 cup of broth, vegetable
  • salt and pepper, to taste
  • leaves of mint, chopped for garnish

Instructions

  1. Cook the Peas
    Cook the frozen peas according to the package instructions. Usually, this involves boiling them for a few minutes. Drain and set aside.
  2. Sauté Onion
    In a saucepan, melt the butter over medium heat. Add the finely chopped onion and sauté until it becomes soft and translucent.
  3. Add Peas
    Add the cooked peas to the saucepan with the sautéed onions
  4. Mash the Peas
    Using a potato masher or the back of a fork, gently mash the peas to your desired consistency. If you prefer a smoother texture, you can use a blender or food processor.
  5. Add Vegetable Broth
    Pour in the vegetable broth, and stir the peas. Allow them to simmer for a few minutes.
  6. Season
    Season with salt and black pepper to taste. If you like a hint of sweetness, you can add a teaspoon of sugar, but this is optional.
  7. Garnish
    Garnish the mushy peas with chopped fresh mint leaves for a burst of freshness.
  8. Serve
    As a delicious side to fish n chips or bangers and mash!
