Makouda (Moroccan Potato Patties)
A popular street food in Morocco. These fried potato patties are crispy on the outside and tender on the inside.

- 4 Potato(s), large – peeled and boiled until tender
- 2 onion, small, finely chopped
- 1/4 cup of parsley, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- salt and pepper, to taste
- 2 eggs, beaten
- Vegetable oil, for frying
- Harissa Sauce, for serving (optional)
Instructions

Prepare potatoesPeel the boiled potatoes and mash them in a large bowl until smooth.

MixAdd the chopped onion, minced garlic, fresh parsley, ground cumin, paprika, salt, and pepper to the mashed potatoes. Mix well to combine the ingredients.

ShapeAllow the mixture to cool slightly, so it’s easier to handle. Then, shape the mixture into small patties or round balls.

Heat oil for fryingHeat vegetable oil in a frying pan over medium heat.

DipDip each potato patty into the beaten eggs, ensuring they are well-coated on all sides.

FryCarefully place the coated patties into the hot oil and fry until golden brown on both sides. This usually takes about 3-4 minutes per side.

SetOnce the Makouda patties are golden and crispy, remove them from the oil and place them on a plate lined with paper towels to absorb any excess oil.

RepeatRepeat the process with the remaining potato patties.

ServeServe the Makouda hot as a snack or appetizer. They can be enjoyed on their own or with a side of harissa sauce or your favorite dipping sauce.
