- Total Time: 55 minutes
Ingredients
Scale
- 2 tablespoons of olive oil
- 1 onion or 2 shallots finely chopped
- 2 cloves of minced garlic
- 1/2 teaspoon of red pepper flakes
- 1 cup of vodka
- 2 cans (28 oz each) of crushed tomatoes
- 1 cup of heavy cream
- salt and pepper
- 1/2 cup of Parmesan cheese
Instructions
-
Sauté AromaticsIn a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and red pepper flakes, and sauté for an additional 1-2 minutes until the garlic is fragrant.
-
Deglaze with VodkaPour in the vodka and simmer for about 5 minutes to allow the alcohol to cook off and the flavors to meld.
-
Add Crushed TomatoesAdd the crushed tomatoes to the saucepan. Stir well and bring the mixture to a gentle simmer.
-
Simmer the SauceReduce the heat to low and let the sauce simmer for about 20-30 minutes, stirring occasionally. This allows the flavors to intensify and the sauce to thicken.
-
Incorporate Heavy CreamPour in the heavy cream, stirring continuously to combine. Simmer for an additional 5-10 minutes until the sauce is heated through.
-
Season and FinishSeason the sauce with salt and black pepper to taste. Stir in the grated Parmesan cheese until it’s melted and well incorporated.
