Liza’s Vodka Sauce

This creamy and flavorful vodka sauce pairs wonderfully with your favorite pasta.

  • Total Time: 55 minutes

Ingredients

  • 2 tablespoons of olive oil
  • 1 onion or 2 shallots finely chopped
  • 2 cloves of minced garlic
  • 1/2 teaspoon of red pepper flakes
  • 1 cup of vodka
  • 2 cans (28 oz each) of crushed tomatoes
  • 1 cup of heavy cream
  • salt and pepper
  • 1/2 cup of Parmesan cheese

Instructions

  • Sauté Aromatics
    In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and red pepper flakes, and sauté for an additional 1-2 minutes until the garlic is fragrant.
  • Deglaze with Vodka
    Pour in the vodka and simmer for about 5 minutes to allow the alcohol to cook off and the flavors to meld.
  • Add Crushed Tomatoes
    Add the crushed tomatoes to the saucepan. Stir well and bring the mixture to a gentle simmer.
  • Simmer the Sauce
    Reduce the heat to low and let the sauce simmer for about 20-30 minutes, stirring occasionally. This allows the flavors to intensify and the sauce to thicken.
  • Incorporate Heavy Cream
    Pour in the heavy cream, stirring continuously to combine. Simmer for an additional 5-10 minutes until the sauce is heated through.
  • Season and Finish
    Season the sauce with salt and black pepper to taste. Stir in the grated Parmesan cheese until it’s melted and well incorporated.
