Liza’s O-mazing Bread Maker Rapid Loaf Oatmeal Maple Egg Bread
This recipe came from using up baking/cooking ingredients while preparing to move house and was just too good not to keep and share! Egg, oatmeal, buttermilk and a bit of maple syrup make for a loaf you’ll want to make again!

Ingredients

- 1 cup of buttermilk (warm, not hot)
- 1 large egg
- 2 tablespoons of pure maple syrup – can use honey, sugar or other sugar alternative
- 2 tablespoons of butter – Kerrygold preferred – room temperature or melted
- 1 teaspoon of salt
- 3 cups of flour
- 1/2 cup of rolled oats, old fashion
- 2 1/2 teaspoons or one packet of rapid yeast
Instructions

Slightly beat egg, pour into bread maker pan.

Heat buttermilk until slightly warmer than room temperature, less than boiling. Pour into pan with beaten egg.

Add salt, butter and maple syrup.

On top of liquids, add oatmeal and flour.

Make a well in the flour an oatmeal layer. Pour in yeast.

Set the bead maker for 1.5 lb rapid loaf, medium crust.

Once the bread maker is done, allow to cool 45 minutes to one hour before slicing.
Notes
To make without a bread maker machine, just proof once before baking.
