This corn pudding is a quick, easy and delicious side! Using Jiffy cornbread mix, canned corn, sour cream, butter and an egg. Spice it up if you like with chopped jalapeños!

Ingredients

  • 1/2 cup of butter
  • 1 egg
  • 1 cup of sour cream
  • 1 box of Jiffy cornbread mix (8.5 oz box)
  • 1 can of creamed corn (14.5 oz)
  • 1 can of whole kernel corn (14.5 oz)

Instructions

  1. Melt butter in a casserole dish.
  2. Mix in egg and then all remaining ingredients.
  3. Bake at 350 degrees for 1 hour.
