Cake
- 3 eggs
- 1 cup of granulated sugar
- 2/3 cup of pumpkin, plain puree
- 3/4 cup of flour
- 2 teaspoons of cinnamon
- 1/2 teaspoon of salt
- 1 teaspoon of baking powder
Frosting
- 8 oz of cream cheese
- 1/2 teaspoon of vanilla extract
- 1 cup of powdered sugar
- 1/4 tablespoon of lemon juice

PreheatPreheat oven to 375F

MixBeat sugar and eggs 5 mins. While beating, add other ingredients until well combined.

PourLine 11 x 17 cookie sheet/jelly roll pan with parchment and pour batter evenly. Bang pan to release air bubbles.

BakeBake at 375F for 10-12 mins or until toothpick comes out clean.

Make frostingWhile cake is cooking, make frosting. Cream together all ingredients.

Assemble and rollSpread evenly across MOSTLY-cooled cake and gently tuck and roll the short edge of the cake against the frosting.

Slice and serveSlice the logs into 1 inch pieces and sprinkle with powdered sugar before serving

Love this recipe! I added 1/4 teaspoon each of ginger, cloves and nutmeg to the sponge give it a bit more spice and doubled the frosting for piping decoration. The sponge bakes perfectly, very soft and delicate but rolls beautifully. Melt in your mouth texture.
