Grandpa’s Pumpkin Roll With Cream Cheese Frosting

Ingredients

Cake

  • 3 eggs
  • 1 cup of granulated sugar
  • 2/3 cup of pumpkin, plain puree
  • 3/4 cup of flour
  • 2 teaspoons of cinnamon
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking powder

Frosting

  • 8 oz of cream cheese
  • 1/2 teaspoon of vanilla extract
  • 1 cup of powdered sugar
  • 1/4 tablespoon of lemon juice

Instructions

  1. Preheat
    Preheat oven to 375F
  2. Mix
    Beat sugar and eggs 5 mins. While beating, add other ingredients until well combined.
  3. Pour
    Line 11 x 17 cookie sheet/jelly roll pan with parchment and pour batter evenly. Bang pan to release air bubbles.
  4. Bake
    Bake at 375F for 10-12 mins or until toothpick comes out clean.
  5. Make frosting
    While cake is cooking, make frosting. Cream together all ingredients.
  6. Assemble and roll
    Spread evenly across MOSTLY-cooled cake and gently tuck and roll the short edge of the cake against the frosting.
  7. Slice and serve
    Slice the logs into 1 inch pieces and sprinkle with powdered sugar before serving

    Love this recipe! I added 1/4 teaspoon each of ginger, cloves and nutmeg to the sponge give it a bit more spice and doubled the frosting for piping decoration. The sponge bakes perfectly, very soft and delicate but rolls beautifully. Melt in your mouth texture.
