Courtney’s Tomato Soup
From the CFiander Family Collection: Velvety tomato soup: Sauté red onion, garlic in olive oil. Blend tomatoes, add broth, simmer. Finish with a splash of cream.

- 1 tablespoon of olive oil
- 1 onion, large, red
- 1 clove of garlic
- 3 lbs of tomato(s)
- 1 cup of broth, chicken or vegetable
- 1/4 cup of heavy cream
- salt and pepper, to taste
Instructions

SautéIn a large saucepan over medium heat, add oil, onion, garlic. Add salt and pepper to taste. Saute 4-6 minutes until soft.

AddAdd tomatoes and increase heat to medium-high. Cook, stirring continuously, until tomatoes begin to break down (4-6 minutes).

AddAdd broth with 1 cup water. Simmer until tomatoes are very soft (10 minutes).

BlendUsing an immersion blender, blend soup to desired consistency. Add cream, salt, and pepper to taste.
