Ingredients

Units Scale
  • 1 onion, diced
  • 1 stalk of celery, diced
  • 1 carrot, diced
  • 2 tablespoons of butter
  • 1 bag of broccoli, frozen
  • 3 cups of broth, chicken or vegetable
  • 2 cups of milk
  • 3 tablespoons of flour
  • salt and pepper, to taste

Instructions

  1. Sauté and simmer
    Sauté onion, celery, and carrot in butter until softened (5-6 minutes). Add broth and broccoli. Simmer 10 minutes or until broccoli is cooked through.
  2. Blend
    Blend with immersion blender to desired consistency
  3. Make milk mixture
    In a saucepan, melt butter and whisk in flour and pepper until thickened. Slowly whisk in the milk and heat through.
  4. Combine
    Add milk mixture to broccoli. Blend, stir, and season to taste.
