Courtney’s Cream of Broccoli Soup

- 1 onion, diced
- 1 stalk of celery, diced
- 1 carrot, diced
- 2 tablespoons of butter
- 1 bag of broccoli, frozen
- 3 cups of broth, chicken or vegetable
- 2 cups of milk
- 3 tablespoons of flour
- salt and pepper, to taste

Sauté and simmerSauté onion, celery, and carrot in butter until softened (5-6 minutes). Add broth and broccoli. Simmer 10 minutes or until broccoli is cooked through.

BlendBlend with immersion blender to desired consistency

Make milk mixtureIn a saucepan, melt butter and whisk in flour and pepper until thickened. Slowly whisk in the milk and heat through.

CombineAdd milk mixture to broccoli. Blend, stir, and season to taste.
