Comforting flavors of apples, oats, cinnamon and pecans layered in a moist and delicious streusel-topped cake.

For Streusel Topping and Center

  • 1 3/4 cups of flour
  • 1 cup of brown sugar, packed
  • 1 1/4 teaspoon of cinnamon
  • pinch of salt, sea salt or kosher
  • 1 1/2 sticks of butter, unsalted, cut into small pieces
  • 1 1/2 cups of pecans, chopped

For the Cake

  • 1 stick of butter, unsalted, room temperature
  • 1 cup of flour
  • 1 cup of rolled oats, old fashion
  • 1 1/4 teaspoons of baking powder
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1/2 teaspoon of salt
  • 1 cup of granulated sugar
  • 2 large eggs – room temperature
  • 1 1/2 teaspoons of vanilla extract
  • 1 cup of applesauce, unsweetened
  • 1/2 cup of Sour Cream

Instructions

  1. Prepare Streusel Topping and Center
    In a bowl, combine 1 ¾ cups all-purpose flour, brown sugar, cinnamon, and a pinch of salt. Add cold butter and mix until crumbly. Stir in chopped pecans. Chill in fridge while preparing the batter.
  2. Preheat Oven and Prepare Pan
    Preheat your oven to 350°F (175°C). Butter and flour a 9-inch square baking pan.
  3. Make the Cake Batter
    In a mixing bowl, cream together room temperature butter and granulated sugar until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Mix in vanilla extract.
  6. In another bowl, combine 1 cup all-purpose flour, oats, baking powder, baking soda, and a pinch of salt.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce and sour cream. Begin and end with the dry ingredients, mixing until just combined.
  8. Assemble the Cake
    Spread half of the cake batter into the prepared pan.
  9. Sprinkle half of the streusel topping evenly over the batter.
  10. Spread the remaining batter over the streusel layer.
  11. Top with the remaining streusel mixture.
  12. Bake
    Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
