Cinn-fully Good Applesauce Muffins

- 1 1/2 cups of flour, whole wheat
- 1/2 rolled oats, old fashion
- 1 teaspoon of baking powder
- 1/2 teaspoon of sodium bicarbonate (baking soda)
- 1/2 teaspoon of salt
- 1 teaspoon of cinnamon
- 1 cup of applesauce, unsweetened
- 1/2 cup of yogurt, plain Greek
- 1/4 cup of olive oil
- 1/3 cup of pure maple syrup, or honey
- 1 egg(s), large
- 1 teaspoon of vanilla extract
- 1 apple(s), grated
- walnuts, chopped (optional)
- raisins or currants, (optional)
Instructions

Preheat the OvenPreheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups.

Prepare Dry IngredientsIn a large bowl, whisk together the whole wheat flour, oat bran or rolled oats, baking powder, baking soda, salt, and ground cinnamon.

Combine Wet IngredientsIn another bowl, mix together the applesauce, Greek yogurt, olive oil or melted coconut oil, honey or maple syrup, egg, and vanilla extract until well combined.

Mix Wet and Dry IngredientsAdd the wet ingredients to the dry ingredients and stir until just combined. Avoid overmixing.

Add Grated Apple and ExtrasGently fold in the grated apple and, if desired, chopped nuts or currants/raisins.

Fill Muffin CupsSpoon the batter into the prepared muffin cups, filling each about two-thirds full.

BakeBake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Cool and EnjoyAllow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
