Often served with tea, sliced and spread with butter. This traditional Irish bread is perfect for celebrating holidays or simply enjoying a delicious treat!

Ingredients

  • 2 cups of dried fruits, (raisins, currants, sultanas)
  • 1 cup of strong tea, black
  • 1 egg(s), large
  • 3 1/2 cups of flour, all purpose
  • 1/2 cup of granulated sugar
  • 1 teaspoon of mixed spice, (a blend of ground cinnamon, nutmeg, and allspice)
  • 1/4 teaspoon of salt
  • 1 packet (2 1/2 teaspoons) of yeast, dry active
  • 1/4 cup (1/2 stick) of butter, softened – plus extra for brushing
  • honey, for glazing (optional)

Instructions

  1. Prepare the fruits
    Start by brewing a cup of strong black tea. Pour it over the mixed dried fruit in a bowl and let it soak overnight. This will allow the fruit to absorb the tea and become plump.
  2. Start the bread
    In a small bowl, dissolve the yeast in a little warm water with a pinch of sugar. Let it sit for about 5 minutes until it becomes frothy.
  3. Whisk dry ingredients
    In a large mixing bowl, combine the flour, sugar, mixed spice, and salt.
  4. Combine
    Make a well in the center of the dry ingredients and add the soaked fruit (including any remaining tea), beaten egg, softened butter, and the activated yeast mixture.
  5. Mix
    Mix everything together to form a dough. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  6. Proof
    Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
  7. Preheat
    Preheat your oven to 350°F (180°C). Punch down the risen dough and shape it into a round loaf.
  8. 2nd Proof
    Place the shaped dough on a baking sheet, cover it with the kitchen towel, and let it rise again for about 30 minutes.
  9. Bake
    Bake in the preheated oven for 40-45 minutes or until the barmbrack is golden brown and sounds hollow when tapped on the bottom.
  10. Optional: Brush the top with melted butter and drizzle with honey for a glossy finish.
  11. Cool
    Allow the barmbrack to cool on a wire rack before slicing.
