  • Total Time: 45 minutes

Ingredients

Units Scale
  • 4 apple(s), (such as Granny Smith or Honeycrisp)
  • 1/2 cup of rolled oats, old fashion
  • 1/4 cup of nuts, chopped (walnuts or pecans work well)
  • 1/4 cup of cranberries, currants or raisins also work
  • 2 tablespoons of brown sugar
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • pinch of salt
  • 2 tablespoons of butter, melted
  • 1/2 cup of apple juice, or cider

Instructions

  1. Preheat
Preheat your oven to 375°F (190°C).
  2. Prepare the apples
Wash the apples and cut off the tops. Core the apples, leaving about a 1/2-inch thick layer at the bottom. You can use an apple corer or a knife.
  3. Make the filling
In a mixing bowl, combine rolled oats, chopped nuts, dried cranberries or raisins, brown sugar, ground cinnamon, nutmeg, and a pinch of salt. Mix well.
  4. Stuff
Place the cored apples in a baking dish, standing upright. Stuff each apple with the oat and nut mixture, pressing it down gently.
  5. Drizzle
Drizzle melted butter over the stuffed apples.
  6. Pour
Pour apple juice or cider into the bottom of the baking dish.
  7. Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until the apples are tender.
  8. Crisp
Remove the foil and bake for an additional 5-10 minutes to allow the tops to crisp up slightly.
  9. Cool
Once done, remove from the oven and let them cool for a few minutes.
  10. Serve
Serve the baked stuffed apples warm, drizzled with any juices from the baking dish. You can also top them with vanilla ice cream or whipped cream if desired. For extra sweetness, drizzle with a bit of caramel.
