For the cake:

  • 2 cups of flour
  • 1 teaspoon of sodium bicarbonate (baking soda)
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of salt
  • 1/2 cup (1 stick) of unsalted butter – softened
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1 cup of applesauce – unsweetened

For the streusel topping:

  • 1/2 cup of rolled oats, old fashion
  • 1/4 cup of flour
  • 1/4 cup of brown sugar
  • 1/2 teaspoon of cinnamon
  • 1/4 cup (1/2 stick) of butter

Instructions

  1. Preheat
    Preheat your oven to 350°F (175°C). Grease and flour a 9×9 inch baking pan.
  2. Whisk
    In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. Mix
    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, until well combined. Stir in the vanilla extract.
  5. Combine
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the applesauce until evenly incorporated into the batter.
  7. Pour the batter into the prepared baking pan, spreading it out evenly.
  8. Make topping
    In a small bowl, prepare the oatmeal streusel topping by combining the oats, flour, brown sugar, and cinnamon. Pour the melted butter over the mixture and stir until crumbly.
  9. Sprinkle the streusel topping evenly over the cake batter in the pan.
  10. Bake
    Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
