Ingredients
- 1 ½ lbs ground beef
- ½ cup minced onion
- 1 large egg
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup minced green bell pepper
- 1 (10.5 oz) can condensed golden mushroom soup, divided
- 1 cup seasoned stuffing mix (such as Pepperidge Farm)
- ¼ cup evaporated milk

Instructions
Preheat Oven : Set your oven to 350°F (175°C).
Mix Ingredients : In a large mixing bowl, combine the ground beef, minced onion, egg, salt, pepper, green bell pepper, stuffing mix, evaporated milk, and half of the mushroom soup. Mix well until evenly combined.
Shape the Meatloaf : Transfer the mixture to a greased loaf pan or shape it into a loaf on a baking sheet.
Top with Soup : Spread the remaining half of the mushroom soup evenly over the top of the meatloaf.
Bake : Place in the preheated oven and bake for 1 hour, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
Rest and Serve : Let the meatloaf rest for 5-10 minutes before slicing. Serve warm with your favorite sides.
