Ingredients

  • 1 lb spinach
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 chopped shallots
  • 4 cups vegetable stock (low-sodium)
  • 1 cup heavy cream
  • black pepper, freshly ground
  • kosher salt

Instructions

  1. Boil spinach in water for about 3 minutes, then drain and place in bowl of ice water for about 3 minutes. Drain.

  2. Melt butter over medium-high heat, and stir in flour. Add shallots and cook for about 5 minutes, or until softened. Then stir in stock.

  3. Cover the pot and bring to a boil.

  4. Stir in cream and spinach and remove pot from heat.

  5. Puree the soup and return the pot to heat before seasoning with pepper and salt. Cover and bring to a boil, then remove from heat and serve.
