Ingredients
- 1 lb spinach
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 chopped shallots
- 4 cups vegetable stock (low-sodium)
- 1 cup heavy cream
- black pepper, freshly ground
- kosher salt
Instructions
Boil spinach in water for about 3 minutes, then drain and place in bowl of ice water for about 3 minutes. Drain.
Melt butter over medium-high heat, and stir in flour. Add shallots and cook for about 5 minutes, or until softened. Then stir in stock.
Cover the pot and bring to a boil.
Stir in cream and spinach and remove pot from heat.
Puree the soup and return the pot to heat before seasoning with pepper and salt. Cover and bring to a boil, then remove from heat and serve.
