Ingredients
- 8 ounces white sharp cheddar cheese
- 1 (8 ounce) package cream cheese
- 1 tablespoon fresh chopped basil
- 1 pinch of kosher salt (to taste)
- fresh ground pepper (to taste)
- 1/2 cup extra virgin olive oil
- 1/2 cup balsamic vinegar
- 1 (2 ounce) jar diced pimentos, drained (can substitute with sundried tomatoes)
- 2 tablespoons chopped fresh parsley
- 3 tablespoons minced green onions
- 1 tablespoon chives, chopped
- 1 bulb of garlic
- 1/4 cup pine nuts (optional)

Instructions
Place the cream cheese in the freezer for 30-45 minutes to make it easier to slice
Roast the garlic: Cut the top from the garlic bulb exposing the cloves. Place on foil, drizzle olive oil over the top of the exposed cloves, seal and bake for 45 minutes at 400F - allow to cool for 15 minutes before pressing out the buttery cloves.
Cut cheddar cheese and cream cheese into 1/4 inch slices, then again in half.
Using a small dish, place cheese slices on end alternating cheddar and cream cheese.
Make the marinade by combining, basil, oil, vinegar, pimento, parsley, chives, onion, pine nuts (if using) and garlic.
Pour marinade over cheese, sprinkle with salt and pepper.
Cover and refrigerate overnight.
Remove from refrigerator in advance and serve at room temperature.
