Ingredients
- 1 lb of green beans, fresh, trimmed
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of butter, unsalted
- salt and pepper, to taste
- 1 lemon, zested
- water, iced for blanching
Instructions
Blanch Bring a pot of salted water to a boil. Add green beans and cook for 2-3 minutes until crisp-tender. Transfer beans to ice water to stop cooking, then drain.
Sauté In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
Add green beans Pat the blanched green beans dry and add them to the skillet. Toss the beans in the garlic-infused oil until coated.
Season Season with salt and pepper to taste. Sauté for an additional 2-3 minutes, allowing flavors to meld.
Serve Transfer to a serving dish, garnish with lemon zest.
