This no-bake lemon cheesecake is a refreshing and creamy dessert, perfect for any occasion. Enjoy the zesty flavor of lemon in every bite!

Ingredients

Graham Cracker Crust

  • 1 1/2 cups of graham crackers, crumbs
  • 1/3 cup of butter, melted
  • 2 tablespoons of granulated sugar

Filling

  • 2 8 oz packages of cream cheese, softened
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of lemon zest
  • 1/4 cup of fresh lemon juice

Topping

  • whipped cream or powdered sugar for dusting

Instructions

  1. Prepare the Crust
    In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a baking dish. Chill in the refrigerator while preparing the filling.
  2. Make the Filling
    In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar, vanilla extract, lemon zest, and fresh lemon juice. Mix until well combined and smooth.
  3. Assemble the Cheesecake
    Pour the cream cheese mixture over the prepared crust in the baking dish. Smooth the top with a spatula.
  4. Chill
    Refrigerate the cheesecake for at least 4 hours or preferably overnight to allow it to set.
  5. Add Topping
    Prior to serving, spread a layer of whipped cream on top of the chilled cheesecake
