Easy Vegan Fanta Cake: A simple, flavorful treat made with minimal ingredients, perfect for vegans and beginner bakers. Enjoy the citrusy delight!

Cake

  • 2 cups of flour
  • 1 cup of granulated sugar
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of Fanta drink
  • 1/2 cup of Vegetable oil
  • 2 tablespoons of cider vinegar
  • 1 teaspoon of vanilla extract
  • zest of orange

Glaze (optional)

  • 1 cup of powdered sugar
  • 23 tablespoons of Fanta drink
  • zest of orange

Instructions

  1. Preheat
    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square cake pan or line it with parchment paper.
  2. Mix Dry Ingredients:
    In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until well combined.
  3. Combine Wet Ingredients
    In a separate bowl, mix together the Fanta, vegetable oil, apple cider vinegar, vanilla extract, and orange zest (if using).
  4. Combine Wet and Dry Ingredients
    Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Do not overmix; a few lumps are fine.
  5. Pour the batter into the prepared cake pan, spreading it evenly with a spatula.
  6. Bake
    Place the pan in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool
    Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Prepare Glaze
    In a small bowl, whisk together the powdered sugar, Fanta, and orange zest (if using) until smooth. Adjust the consistency by adding more Fanta if too thick or more powdered sugar if too thin.
  9. Once the cake has cooled, drizzle the glaze over the top of the cake. Allow the glaze to set for a few minutes before slicing and serving.
