“The Brits” Green Soup
From the CFiander Family Collection: Family-favorite soup: onions, leeks, spring onions, garlic sautéed, blended with broccoli, peas, fresh mint in 6 cups of broth. Pair with sourdough for a wholesome, tasty delight!

- 1 onion, finely chopped
- 2 leeks, finely chopped
- 2 green onions (salad onions), finely chopped
- 2 cloves of garlic, finely chopped
- 1 tablespoon of olive oil
- 2–3 tablespoons of butter
- 6 cups of broth, chicken or vegetable
- 1 head of broccoli, chopped
- 2 cups of peas, frozen
- 2–3 sprigs of mint, fresh
- salt and pepper, to taste

SautéPut the chopped onion, leeks, spring onions, olive oil and butter in a big heavy bottomed saucepan to soften for about 10 minutes.

Add stockAdd the stock, frozen peas and broccoli and let it boil softly for about 20 mins.

BlendTake off the heat, add the mint and blitz the soup with a food processor or stick blender. It should be a thick but still soup like texture. If its too thin, put it back in the pan and boil gently until it thickens – you could also add more peas if it’s really thin. If it’s too thick to pour add some more stock.

SeasonAdd salt and pepper to taste.
