For the Sauce

  • 1/4 cup of peanut butter
  • 3 tablespoons of soy sauce
  • 2 tablespoons of lime(s)
  • 2 tablespoons of honey
  • 1 tablespoon of Sriracha sauce
  • 1 teaspoon of sesame oil
  • 2 cloves of garlic
  • 1 teaspoon of ginger

For the Noodles

  • 1 8 oz package (about 225g) of rice noodles
  • 2 tablespoons of Vegetable oil
  • 1 bell pepper
  • 1 carrot(s)
  • 1 cup of broccoli
  • 1/2 cup of green onions (salad onions)
  • roasted peanuts
  • fresh coriander (cilantro) for garnish
  • 2 limes cut into wedges for garnish

Instructions

  • Prepare the Sauce
    In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, Sriracha sauce, sesame oil, minced garlic, and grated ginger. Set aside.
  • Cook the Noodles
    Cook the noodles according to package instructions. Drain and set aside.
  • Stir-Fry Vegetables
    Heat vegetable oil in a large pan or wok over medium-high heat. Add sliced red bell pepper, julienned carrot, and broccoli florets. Stir-fry for 3-4 minutes or until the vegetables are slightly tender.
  • Combine Noodles and Sauce
    Add the cooked noodles to the pan with the stir-fried vegetables Pour the prepared peanut satay sauce over the noodles and vegetables. Toss everything together until the noodles and vegetables are well coated in the sauce.
  • Garnish and serve
    Garnish with chopped green onions, crushed peanuts, and fresh cilantro leaves – serve with lime wedges to spritz over.
