A great way to use up leftover mashed potatoes! Just mashed potatoes, sausage and egg.

Ingredients

Scale
  • 1/4 lb pork sausage
  • 1 1/2 cups mashed potatoes
  • 1 large egg
  • Kosher salt (to taste)

Instructions

  1. Crumble sausage and add to large skillet over medium heat; cook until browned. Drain sausage and reserve drippings.
  2. Combine sausage, potatoes, and lightly beaten egg, along with approx. 1 tablespoon of drippings (or frying oil) and salt.
  3. Make 4 patties and fry in sausage drippings until both sides have browned
