Sausage Potato Pancakes
A great way to use up leftover mashed potatoes! Just mashed potatoes, sausage and egg.

Ingredients

- 1/4 lb pork sausage
- 1 1/2 cups mashed potatoes
- 1 large egg
- Kosher salt (to taste)
Instructions
- Crumble sausage and add to large skillet over medium heat; cook until browned. Drain sausage and reserve drippings.
- Combine sausage, potatoes, and lightly beaten egg, along with approx. 1 tablespoon of drippings (or frying oil) and salt.
- Make 4 patties and fry in sausage drippings until both sides have browned
