Robin’s Fruit Punch Bars

- 2 eggs
- 1/2 cup of granulated sugar
- 1 can of fruit cocktail
- 2 1/4 cups of flour
- 1 1/2 teaspoon of sodium bicarbonate (baking soda)
- 1/2 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1 1/3 cups of coconut, flaked
- 1/2 cup of walnuts
Glaze
- 3/4 cup of granulated sugar
- 1/2 butter
- 1/4 cup of evaporated milk
- 1/2 teaspoon of vanilla extract
- 1/2 walnuts
Instructions

Preheat oven to 350°F (177°C) – grease and flour a 10x13x1″ pan.

MixBeat eggs and sugar with a mixer on high speed until light and fluffy.

Add fruit cocktail, flour, soda, salt and vanilla extract. Beat at medium speed of mixer until well well blended, scraping the sides and bottom of the bowl.

BakePour into the pan and spread evenly.

Bake at 350°F (177°C) for 20-25 minutes until golden brown.

Prepare glazeWhile baking, mix together sugar, butter, evaporated milk and vanilla until smooth.

Remove from oven and while still hot, drizzle with glaze and top with walnuts.
