Instructions

  1. Bring the vegetable stock to a simmer in a saucepan and keep warm.

  2. In a large saucepan, combine the wheat berries, diced onion, and enough warm stock to cover.

  3. Cook over medium heat, stirring often and adding more stock as it is absorbed.

  4. Continue cooking until the wheat berries are tender and creamy, about 1 hr 15 min total.

  5. Serve warm.
