Ingredients
- 1/2 lb bacon
- Dandelion greens
- 1/4 cup balsamic vinegar
- 1 1/2 tablespoons honey Dijon mustard
- Feta cheese
Instructions
Wash and dry the dandelion greens, then place them in a large bowl.
Cook the bacon in a skillet until crisp; remove and crumble, reserving the warm drippings in the skillet.
Whisk the balsamic vinegar and honey Dijon mustard into the warm bacon drippings to make a dressing.
Pour the warm dressing over the dandelion greens and toss until lightly wilted.
Top with crumbled bacon and feta cheese, then serve.
