  • 1/2 cup hard red wheat
  • Juice of 1 fresh lemon

  1. Rinse the hard red wheat under cold water.

  2. Combine the water and wheat in a saucepan and bring to a boil.

  3. Reduce heat, cover, and simmer until the wheat berries are tender, adding more water only if needed.

  5. Toss the cooled wheat berries with the fresh lemon juice and serve.
