  • 2 large baked potatoes (about 1.25 pounds)
  • cooking spray
  • 1 cup shredded colby or 1 cup monterey jack cheese
  • 6 slices turkey bacon, cooked, drained, and crumbled
  • 1/3 cup sliced scallion
  • 4 tablespoons barbecue sauce

Instructions

  1. preheat oven to 450F.

  2. Cut Potatoes into 1/4 inch thick slices. Generously spray both sides of Potato Rounds with Butter spray. Place on baking stone or cookie sheet and bake 20 minutes or until lightly browned; remove from oven.

  3. Combine cheese, bacon, & Scallions. Brush each Potato Round with BBQ sauce, sprinkle with cheese mixture, and return to oven. Bake 3-5 minutes or until cheese is melted.

  4. YUM!
