Equipment

11 x 7-inch baking pan, mixing bowls, sifter

Ingredients

  • 1/4 cup shortening
  • 1 cup brown sugar, firmly packed
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon lemon extract
  • 1 cup mashed ripe banana (About 2 medium bananas)
  • 1 1/2 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1/2 cup of chopped nuts (whatever you like)
  • 1/3 cup powdered sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°.

  2. Cream shortening and brown sugar.

  3. Add extracts and banana, beating well.

  4. Sift flour, salt and baking powder; add to wet mixture.

  5. Stir in nuts.

  6. Pour into well-greased 11 X 7-inch baking pan.

  7. Bake for 30 to 35 minutes.

  8. While still warm, cut into bars and remove from pan.

  9. Mix: 1/3 cup powdered sugar and 1 tsp cinnamon.

  10. Gently roll bars in mixture while slightly warm.

  11. Store in airtight container.
