- 1 lb spicy breakfast sausage, such as Jimmy Dean
- 12 eggs
- 2 cups grated cheese, cheddar and Monterey Jack blend

Instructions
Preheat the oven and prepare a quiche dish or baking dish.
Cook the spicy breakfast sausage until browned and cooked through; drain excess fat.
Beat the eggs in a large bowl.
Stir the cooked sausage and grated cheese into the eggs.
Pour the mixture into the prepared dish.
Bake until the quiche is set and lightly browned.
