Ingredients

  • 1 (6 ounce) package chicken stove top stuffing mix
  • 1 lb store bought rotisserie turkey breast, diced
  • 1 tablespoon fresh sage, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/4 cup chicken stock
  • egg roll wrap
  • 2 eggs
  • 1 -2 tablespoon water
  • oil, for frying
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/4 cup onion, finely minced
  • the drippings from the rotisserie turkey
  • 2 cups chicken stock

Instructions

  1. Prepare stuffing mix, following package directions.

  2. Dice turkey breast, removing skin first.

  3. Place stuffing, fresh herbs and chicken stock in a medium sauce pan and heat over medium heat.

  4. when all herbs and stock are incorporated with the stuffing transfer to a mixing bowl.

  5. Add diced turkey and combine.

  6. Combine eggs and water to make an egg wash.

  7. Place 2 tablespoons of the stuffing and turkey mixture in the center of each egg roll wrapper.

  8. Paint egg wash around the border of each egg roll wrapper.

  9. Fold the egg rolls

  10. Fry egg rolls in 375 degree oil in a deep fryer.

  11. When golden brown remove from the fryer and drain on paper towels.

  12. For Gravy Dip:.

  13. In a medium sauce pan heat the butter over medium heat.

  14. Add flour and whisk to make a roux.

  15. Add onions, turkey drippings and chicken stock.

  16. whisk and let simmer while it thickens.

  17. Serve the egg rolls with a side of the gravy for dipping.
