Texas-style breakfast tacos are a delicious and versatile dish. Here's a simple recipe that allows for customization with options for meat or vegetarian fillings, potatoes, and beans. Ingredients

  • flour tortillas, small sized
  • 1 tablespoon of Vegetable oil
  • 1 cup of Potato(s), diced
  • salt and pepper, to taste
  • cheese, shredded - optional
  • Sour Cream, optional
  • salsa
  • 1/2 pound of sausage, breakfast or chorizo (vegetarian sausage is an option for a vegetarian version)
  • 4 egg(s), beaten
  • 1 15 oz can of beans, your choice, black, pinto or refried all work great
  • 1 teaspoon of cumin
  • 1/2 teaspoon of chili powder
  • 1/4 teaspoon of cayenne pepper, (optional for extra heat)

Instructions

  1. Prepare Potatoes Heat vegetable oil in a skillet over medium heat. Add diced potatoes and cook until golden brown and cooked through. Season with salt and pepper to taste.

  2. Prepare Meat Filling (if using) In a separate pan, cook breakfast sausage or chorizo over medium heat until browned. Remove excess grease. Push the cooked meat to the side of the pan and add beaten eggs to the other side. Scramble the eggs and mix them with the cooked meat. Season with salt and pepper to taste.

  3. Prepare Vegetarian Filling (if using) In a saucepan, combine black beans, ground cumin, chili powder, and cayenne pepper (if using). Cook over medium heat until heated through. Season with salt and pepper to taste

  4. Assemble Breakfast Tacos Warm the flour tortillas in a dry skillet or microwave for a few seconds until pliable. Spoon the desired filling (potatoes, meat, or beans) onto each tortilla. Add optional toppings such as shredded cheese, salsa, sour cream, and cilantro.

  5. Serve and Enjoy Fold the tortillas in half to form tacos. Serve immediately and enjoy your customizable Texas-style breakfast tacos!
