A homemade southern chicken pie recipe.

Ingredients

  • 1 medium-size chicken
  • Diced pimiento
  • 2 hard-boiled eggs
  • Boiling water
  • 5 tbsp. flour
  • Salt and pepper to taste
  • Whole sweet milk, if more liquid is needed
  • Butter, for dotting
  • Crust: 1 cup flour
  • Crust: 4 tbsp. shortening
  • Crust: ½ tsp. salt
  • Crust: 4 tbsp. cold water (approx.)

Instructions

  1. Cover the chicken with boiling water. Cover pan and simmer until very tender.

  2. Cool the chicken in the liquid. When cool, remove the skin and bones.

  3. Thicken the liquid with flour and season with salt and pepper.

  4. Place the skinned and boned chicken in a baking dish, adding the cut-up eggs and pimiento.

  5. Cover with the thickened broth. If more liquid is needed, use whole sweet milk.

  6. Dot with butter.

  7. Cover with crust and bake in a moderately hot oven (350 degrees) until brown. 30 to 45 minutes.

  8. Crust: Sift the flour with the salt, cut in shortening and add the water, a little at a time. Toss lightly with fork. Roll the dough and cover the pie only.
