Ingredients

  • 1 ½ lbs ground beef
  • ¾ cup breadcrumbs (plain or seasoned)
  • ½ cup milk
  • 1 large egg
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons BBQ sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ⅓ cup BBQ sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) . Line a baking sheet with parchment paper or lightly grease a loaf pan.

  2. Prepare the meatloaf mixture: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, BBQ sauce, Worcestershire sauce, smoked paprika, salt, and pepper. Mix until just combined.

  3. Shape the loaf: Form the mixture into a loaf shape on the baking sheet or press it into the loaf pan.

  4. Make the glaze: In a small bowl, whisk together the BBQ sauce, brown sugar, and Dijon mustard.

  5. Add the glaze: Spread half the glaze evenly over the top of the meatloaf.

  6. Bake: Bake for 50–60 minutes , or until the internal temperature reaches 160°F (71°C) . About 10 minutes before it's done, spread the remaining glaze over the top.

  7. Rest and serve: Let the meatloaf rest for 5–10 minutes before slicing. Serve with coleslaw, roasted vegetables, or cornbread for a BBQ-inspired meal.

Notes

Tips:

  • Add chopped bell peppers for extra texture and flavor.
  • Use a mix of ground beef and ground pork for a richer taste.
  • For a smoky kick, sprinkle a bit of chipotle powder into the glaze.
