  • 6 avocados
  • 6 ounces smoked salmon
  • 12 eggs
  • salt
  • black pepper
  • red chili pepper flakes
  • dill, chopped
  • toast

Instructions

  1. Preheat oven to 425 degrees F.

  2. Halve all of the avocados and remove pits.

  3. Place avocados on a baking sheet and fill the holes with strips of smoked salmon. Crack an egg into each hole, making sure the yolk remains intact. If all of the egg white doesn't fit into the hole, leave some out.

  4. Top each egg with salt and fresh black pepper.

  5. Bake eggs for 15 minutes or until whites are set.

  6. Garnish with red chili flakes and fresh dill.

  7. Serve with toast.
