Ingredients

  • 3 tablespoons onions, chopped
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/8 teaspoon pepper
  • 1 1/2 cups milk
  • 2 cups cheddar cheese, shredded
  • 1/2 lb ham, cut into 1/8 inch slices
  • 6 cups potatoes, sliced cooked

Instructions

  1. Saute onion in butter. Blend in flour and seasonings.

  2. Gradually add milk, stirring constantly until thickened.

  3. Add 1 1/2 cups cheese. Stir until melted.

  4. Toss potatoes in cheese sauce.

  5. Pour into 2 quart casserole, reserving 1 cup potato slices.

  6. Arrange ham and remaining potato slices on top of casserole.

  7. Bake at 350F for 30 minutes.

  8. Top with remaining cheese and serve.
