Ingredients

  • 3 lbs fish (use a fresh whole mild white fish, gutted, scaled and head removed)
  • 1 1/2 cups coconut milk
  • 1/2 onion, chopped
  • 1 teaspoon salt
  • 1 chili pepper, minced

Instructions

  1. Prepare the grill, preferably a charcoal grill. Grill the whole fish until it is cooked (the flesh flakes easily with a fork).

  2. Meanwhile add the coconut milk, onion, salt and chile pepper in a bowl.

  3. When the fish is cooked, pour the coconut milk mixture over the fish to thoroughly soak it. Cover and let stand for 5 minutes to absorb the milk mixture.

  4. Serve with cooked rice.
