Robin's beloved Lemon Cake: a moist yellow delight topped with zesty lemon icing. Serves 12-16 hot or cold.

Ingredients
- 1 package of Yellow Cake Mix
- 4 egg(s)
- 3/4 cup of Vegetable oil, (salad oil)
- 3/4 water
- 2 cups of powdered sugar, sifted
- 2 lemon, whole lemons, juiced and zest grated
Instructions
The Cake Preheat oven to 350°F (177°C) - grease and flour the pan.
Combine all ingredients - beat for 4 minutes.
Pour into prepared pan.
Bake Bake at 350°F (177°C) for 35-40 minutes (until toothpick inserted comes out clean).
Make the icing While the cake is baking, place juice and rind of 2 lemons in the blender. Add powdered sugar and blend until smooth.
Remove cake from the oven and punch holes in the top with a meat fork.
Pour the icing over the top while still hot.
Notes
Serves 12-16 hot or cold.
