Ingredients
- 1/3 cup of banana(s)
- 1/2 cup of butter
- 3 egg(s)
- 1 teaspoon of vanilla extract
- 1 1/4 cups of water
- 3 cups of flour
- 1 teaspoon of sodium bicarbonate (baking soda)
- 2 teaspoons of baking powder
- 1 1/2 cups of dates
- 1/3 cup of dates
- 1/3 cup of walnuts
- 1/3 cup of coconut
Instructions
Preheat Preheat oven to 350°F (177°C). Grease and flour pan.
Beat Beat together mashed banana and butter until creamy.
Add eggs, vanilla and water and beat well.
Whisk Whisk together dry ingredients, add to wet mixture a bit at a time.
Fold Gently fold in dates until well mixed in.
Pour Pour batter into prepared pan, spread evenly.
Make topping Combine topping ingredients and sprinkle over batter.
Bake Bake in preheated oven for 20 to 25 minutes or until tester comes out clean.
Cool on a wire rack. Serves 8-10
