Ingredients

  • 300 g all-purpose flour
  • 100 g light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 2 eggs
  • 230 ml light soymilk
  • 60 ml corn oil
  • 1 fresh apple, peeled, cored and shredded
  • 1 tablespoon brown sugar, for sprinkling
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 180°C.

  2. Spray 12 muffin cups or use a silicon heart or donuts cup (what ever you like).

  3. Combine together the flour with the sugar, the baking powder and 1 tsp of cinnamon.

  4. In another bowl beat the eggs, add the milk and the oil.

  5. Stir in the flour mixture.

  6. Squeeze the juice from the shredded apples and add them to the batter.

  7. Stir with a wooden spoon.

  8. Fill the cups 3/4 full.

  9. Combine together 1 tbsp of light brown sugar with 1 tsp ground cinnamon.

  10. Sprinkle the top of the cakes with this mixture.

  11. Pour in the preheated oven.

  12. Bake about 20-25 minutes.

  13. Remove from the oven and chill about 5 minutes on a wire rack.

  14. Walnuts and raisins can be added if desired.

  15. The top of these cakes will be crispy and sweet!
