These delightful mini tarts are an easy to create, perfect combination of creamy, sweet, and tangy flavors. They make for a great bite-sized treat for any occasion!

Ingredients

  • 2 sheets - 1 package of prepared pie crust, premade dough
  • 1 8 oz package of cream cheese, softened
  • 1/3 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1 egg, large
  • 1 cup of cherry pie filling, (canned or homemade)

Instructions

  1. Preheat the Oven Preheat your oven to 375°F (190°C).

  2. Prepare Tart Shells Unroll the pie crusts and use a round cookie cutter or glass to cut circles slightly larger than the muffin tin cups. Press each circle into the greased muffin tin cups, forming mini tart shells.

  3. Make Cream Cheese Filling In a mixing bowl, beat the softened cream cheese until smooth. Add sugar and vanilla extract, and beat until well combined. Add the egg and beat until the mixture is creamy and smooth.

  4. Assemble the Mini Tarts Spoon the cream cheese filling into each tart shell, filling each cup about halfway. Use the back of a spoon or a spatula to smooth the tops of the cream cheese filling.

  5. Bake Bake in the preheated oven for 12-15 minutes or until the tart shells are golden and the cream cheese filling is set.

  6. Cool and Add Cherry Topping Allow the mini tarts to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, spoon a dollop of cherry pie filling on top of each mini tart.

  7. Serve Serve at room temperature with a scoop of vanilla ice cream.
