Low carb Scotch eggs made with hard-cooked eggs wrapped in pork sausage, coated with crushed pork rinds and cheddar, then cooked until browned.

Ingredients
- 6 eggs
- 1 lb bulk pork sausage
- 1/2 cup pork rind, crushed to a powder
- 1/2 cup shredded cheddar cheese
Instructions
Hard-cook the eggs, then cool and peel them.
Divide the pork sausage into 6 equal portions.
Flatten each sausage portion and wrap it around one peeled egg, sealing completely.
Mix the crushed pork rinds and shredded cheddar cheese in a shallow dish.
Roll each sausage-wrapped egg in the pork rind and cheddar mixture to coat.
Cook until the sausage is browned and cooked through.
Serve warm.
