  • 1 cup orzo pasta
  • 2 tablespoons oil

  • 1 lemon, zest of
  • 1 lemon, juice of
  • 3 tablespoons chopped fresh mint, or

  • 2 green onions, chopped

  1. In a medium sized pot, bring water to a boil and add the salt, Orzo, paprika.

  2. Lower to a simmer and cook, covered,12-15 minutes or until tender,.

  3. stirring occasionally.

  4. Let cool slightly and then add the mint, lemon zest/juice and green onions.

  5. Check for seasoning.

  6. Serve.
