Kosher yakisoba or udon is a chicken and noodle stir-fry made with soba or udon noodles, thinly sliced boneless chicken, and cornstarch.

Large pot, colander, wok or large skillet
Ingredients
- 1 lb raw soba noodles or udon noodles
- 2 lbs raw boneless chicken breasts or boneless chicken thighs, sliced thin
- 1 tablespoon cornstarch
Instructions
Cook the soba or udon noodles according to package directions; drain and set aside.
Toss the thinly sliced chicken with the cornstarch.
Stir-fry the chicken in a hot pan until cooked through.
Add the cooked noodles to the pan and toss with the chicken until heated through.
Serve hot.
