Ingredients

  • 1 cup (2 sticks) of butter
  • 1 cup of granulated sugar
  • 4 egg(s)
  • 1 teaspoon of vanilla extract
  • 1 cup of ricotta cheese
  • 1 1/2 cups of flour
  • 1 cup of almond flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1/4 teaspoon of salt
  • 1 cup of powdered sugar
  • 2 tablespoons of almond milk
  • 1/2 teaspoon of almond extract
  • sliced almonds for garnish

Instructions

  1. Preheat the Oven Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. Mix In a large bowl, cream together the softened butter and sugar until light and fluffy

  3. Beat Add eggs one at a time, beating well after each addition. Add vanilla extract and mix until combined.

  4. Stir Stir in the ricotta cheese until smooth

  5. Whisk In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.

  6. Combine Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  7. Pour Pour the batter into the prepared cake pan and smooth the top with a spatula.

  8. Bake Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.

  9. Cool Cool the cake for at least 10 minutes before adding glaze

  10. Make the Almond Glaze In a small bowl, whisk together powdered sugar, almond milk, and almond extract until smooth.

  11. Glaze Drizzle the almond glaze over the cooled cake. Sprinkle sliced almonds over the top.

  12. Serve Allow the glaze to set. Slice, serve and enjoy!
