This creamy and luscious no-bake cheesecake is a perfect dessert for any occasion, and the Irish cream adds a delightful twist to the classic recipe.

Ingredients

  • 1 1/2 cups of graham crackers, crumbed
  • 1/2 cup (1 stick) of butter, melted
  • 2 tablespoons of granulated sugar
  • 16 oz (2 packages) of cream cheese, room temperature
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1/2 cup of Irish cream liqueur, your preferred brand
  • 1 1/2 cup of heavy cream, whipping cream, whipped to stiff peaks
  • cocoa powder (unsweetened), for dusting
  • whipped cream

Instructions

  1. Prepare the Crust In a bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated.

  2. Press into Pan Press the mixture into the bottom of a 9-inch springform pan or individual serving dishes to form an even crust. Use the back of a spoon to compact the crumbs.

  3. Chill Place the crust in the refrigerator to chill while you prepare the filling.

  4. Beat Cream Cheese In a large mixing bowl, beat the softened cream cheese until smooth.

  5. Add Sugar and Vanilla Add the powdered sugar and vanilla extract to the cream cheese. Beat until well combined.

  6. Add Irish Cream Liqueur Pour in the Irish cream liqueur and continue to beat until the mixture is smooth and creamy.

  7. Fold in Whipped Cream Gently fold in the whipped heavy cream until the mixture is well combined. Be careful not to deflate the whipped cream.

  8. Fill the Crust Spoon the cheesecake filling over the prepared crust, spreading it evenly.

  9. Chill Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight to allow the cheesecake to set.

  10. Garnish (optional) Dust with cocoa powder. Add a few dollops of whipped cream and sprinkle with chocolate shavings (if you wish)

  11. Slice and Serve Carefully remove the sides of the springform pan if used, or serve individual portions. Slice and enjoy your Irish Cream No-Bake Cheesecake!
