Ingredients
- 2 eggs (organic)
- 1/4 cup grated cheese (I used Romano)
- 1 (10 ounce) package frozen peas
- 1 cup dry breadcrumbs
- 4 green onions (chopped)
- 2 tablespoons tamari soy sauce
- 2 teaspoons Dijon mustard
- 1/4 teaspoon sea salt
- 2 garlic cloves (pressed)
- 16 ounces seitan (ground)

Instructions
Beat the eggs.
Grind the Seitan up in a food processor until if resembles hamburger.
Mix the cheese, bread crumbs, green onion, tamari, mustard, sea salt and cloves together.
Add to the eggs and then add the egg mixture to the ground Seitan. Add the peas.
Mix well and saute the whole mixture in a non-stick saute pan until the Seitan is lightly browned. You just want to make sure the eggs are cooked.
If you want, you can use ground chicken in this.
Use on top of your favourite grain.
