Equipment

Mixing bowl, wooden spoon, 20cm square cake tin, saucepan, oven

Ingredients

  • 175 g butter
  • 175 g self-raising flour
  • 175 g sugar
  • 3 eggs
  • 1 teaspoon baking powder
  • 2 tablespoons milk
  • 2 lemons
  • 115 g sugar
  • 284 ml whipping cream
  • 250 g berries

Instructions

  1. Mix the butter in a bowl with the flour, eggs, sugar, milk, zest, and baking powder.

  2. Mix together with a wooden spoon and pour into a greased and lined 20cm square cake tin.

  3. Bake in a preheated oven at 180C/160C fan/gas mark 4 for 45 minutes until cooked.

  4. For the syrup, dissolve the juice and sugar in a saucepan over a gentle heat. Whilst the cake is still warm, drizzle over the top.

  5. When cooled, halve the cake and sandwich together with half of the cream. Decorate with fresh berries and the remainder of the whipped cream.
