  • 2 tablespoons butter
  • 2 tablespoons minced onions
  • 2 teaspoons minced garlic
  • 2 tablespoons all-purpose flour
  • 3 cups half-and-half
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 1/2 cups parmesan cheese, shredded

Instructions

  1. In large saucepan, melt butter over medium-high heat.

  2. Add onion and garlic and cook for 4 minutes, stirring frequently, or until onion is tender.

  3. Reduce heat to medium-low.

  4. Add flour, and cook, whisking constantly for 2 minutes.

  5. Gradually add half-and-half, whisking constantly, for 8-10 minutes or just until mixture comes to a boil.

  6. Remove from heat, and stir in nutmeg, salt and pepper.

  7. Add cheese, stirring until melted and smooth.

  8. Serve with pasta, vegetables, chicken or seafood.
